Zucchini Boats
The perfect zucchini boats recipe with a picture and simple step-by-step instructions.
- 2 Zucchinis
- 200 g Mixed minced meat
- 1 Ripe avocado
- 3 Carrots
- 1 cups Sour cream or créme fraîche
- 50 g Grated cheese
- Halve the zucchini lengthways and divide into 2 to 3 equally sized halves; Then fry the halves with the cut side in a hot pan with a little butter – preferably herb butter
- Season the minced meat with salt & pepper and fry it; Cut the avocado into small pieces and then mix them with the fried mince
- 3rd filling: grate the carrots with a cheese grater and add the sour cream / créme fraîche to the minced avocado mixture; then season the mixture with a little ginger and lemon pepper and salt; TIP: 1 teaspoon of medium-hot mustard also fits very well in the filling
- Fill the zucchini halves with the minced meat mixture and sprinkle with a little cheese if necessary; Cook the courgette boats in an ovenproof dish for 20-25 minutes at 200 degrees
