Zucchini bread

Ingredients for 4 servings:

  • 400 g zucchini, small
  • 3 tomatoes
  • 4 small goat cheeses, round
  • 2 tbsp olive oil
  • 1 tsp thyme, fresh, leaves
  • 4 slices of farmhouse bread, not too thinly sliced
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash and trim the zucchini, and slice or grate it lengthwise into thin slices. Wash the tomatoes, remove the stems, and slice them thinly. Halve the goat cheese crosswise. Mix the oil with salt, pepper, and thyme and toss the zucchini in it. Preheat the oven to 200°C (180°C fan/convection oven). Top the bread slices with tomatoes, then with the zucchini, and place the cheese on top. Drizzle with the remaining oil mixture. Bake the bread in the hot oven for 6-8 minutes, until the cheese is lightly browned. Tip: If you don’t like goat cheese, you can substitute it with feta or mozzarella.
