Zucchini Carpaccio Salad

Ingredients for 4 servings:

  • 500 g zucchini
  • 2 tbsp olive oil, high quality
  • 2 pinches of salt
  • 2 pinches of pepper
  • 3 tbsp balsamic vinegar
  • e.g. Parmesan

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Wash the zucchini and slice it thinly. Heat olive oil in a nonstick pan. Sauté the zucchini slices vigorously; they can brown slightly, if desired; this will take about 10 minutes. Transfer the zucchini slices to a shallow serving dish and drizzle with balsamic vinegar while still hot. Season with salt and pepper. Grate Parmesan cheese over the top just before serving. Can be eaten hot or cold.
