Ingredients for 1 servings:

  • 240 g flour
  • 1 tsp baking powder
  • 1 pinch of baking soda
  • 1 pinch of salt
  • 100 g sugar
  • 60 ml oil
  • 1 egg(s)
  • 125 ml milk
  • 75 g cocoa powder (not instant powder)
  • 200 g chocolate sprinkles

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the flour, baking powder, salt, sugar, and cocoa powder and sift into a bowl. Lightly crack the egg and whisk it with the milk and oil. Add the egg mixture to the flour mixture and mix gently until a slightly thick batter forms. Fold in the chocolate sprinkles. Fill the batter into the holes of a prepared muffin tin. Bake in a preheated oven at 200°C (convection oven) for approx. 20-25 minutes. Then let it rest in the tin for approx. 5-10 minutes. Caution: Muffin batter should never be worked with an electric mixer for longer than 1 to 1.5 minutes, otherwise the batter will be overmixed, become tough, and won’t rise properly during baking. In my experience, it’s best to mix with a whisk and some elbow grease.
