Ingredients for 4 servings:
- 500 g zucchini
- 1 large onion(s)
- 1 bunch of parsley
- 100g mozzarella
- 2 eggs
- 2 tbsp flour
- ½ cup sour cream
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Grate the unpeeled zucchini with a grater. Finely dice the onion and add it to the vegetables. Transfer everything to a gratin dish. Dice the mozzarella cheese and add it to the dish, mixing well. Combine the eggs, flour, and sour cream and pour over the vegetable mixture. Bake in a preheated oven at 220°C (425°F) on the lowest rack for about 20-30 minutes. Serve with grilled meat or simply fresh bread.
