Zucchini Cheese Waffles with Fried Egg and Spinach
The perfect zucchini cheese waffles with fried egg and spinach recipe with a picture and simple step-by-step instructions.
- 1 medium sized Zucchini fresh
- 0,25 tsp Salt
- 300 g Spelled flour
- 1 packet Baking powder
- 7 Eggs
- 300 ml Milk
- 120 ml Rapeseed oil
- 80 g Freshly grated Parmesan
- Salt and pepper
- Freshly grated nutmeg
- 250 g Frozen spinach leaves
- 3 tbsp Butter
- Chili sauce
- Wash and clean the zucchini, grate finely, season with salt and leave to steep for 10 minutes. Then put in a sieve, squeeze out and drain.
- Preheat the oven to 60 degrees. Put the flour and baking powder in a bowl. Add 2 eggs, milk, rapeseed oil, Parmesan, zucchini, nutmeg, salt and pepper to the bowl. Mix everything to a smooth batter.
- Preheat the waffle iron, oil a little and gradually bake the dough into waffles. Keep the finished waffles warm in the oven.
- Put 1El butter with spinach in a saucepan and heat. Season with salt, pepper and nutmeg. Heat the remaining butter (2 tablespoons) in a pan. Gradually fry 5 eggs into fried eggs. Season with salt and pepper.
- Arrange the waffles on plates, spread the spinach on top and top with 1 fried egg. Serve drizzled with a little chili sauce to taste.
