Zucchini fritters

Ingredients for 4 servings:

  • 500 g zucchini, grated
  • 2 tsp salt
  • 125 g breadcrumbs
  • 2 tbsp semolina
  • 170 g Emmental cheese, grated
  • 1 tsp vegetable broth powder
  • 80 g diced ham
  • 3 tbsp mixed herbs, e.g. parsley, thyme, oregano, olive herb, fennel etc.
  • n. B. Pfeffer
  • nutmeg
  • chili salt
  • Olive oil for frying
  • 2 eggs

Instructions

Working time approx. 10 minutes; Rest time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 35 minutes

Tastes good warm and cold

Toss the grated zucchini with the salt and let it soak in a sieve. Transfer to a bowl and mix with the remaining ingredients. Season to taste. With moistened hands, form patties. Heat the olive oil in a pan. Fry the patties over low heat until golden brown on both sides. Serve with a mixed salad. Without the ham, this is a delicious vegetarian dish.
