Ingredients for 1 servings:

  • 150 g zucchini
  • 170 g flour
  • 2 tsp baking powder
  • 50 g Parmesan
  • 2 eggs
  • 2 tsp basil pesto
  • 3 tbsp olive oil
  • 100 ml water
  • Fat for the mold

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Sift the flour into a bowl. Add the baking powder, grated zucchini, and Parmesan cheese, and mix to combine. Combine the water with olive oil, eggs, and basil pesto. Blend everything into a batter. Grease and fill muffin tins, and bake at 180 degrees Celsius for 30 minutes.
