Ingredients for 4 servings:

  • 2 zucchini, 500 g – 600 g
  • ½ bulb(s) of garlic, Chinese single-clove garlic or 2 cloves of garlic
  • 3 tbsp olive oil
  • ½ tsp salt
  • ½ sprig(s) rosemary
  • 1 tsp thyme, finely chopped
  • 4 sage leaves
  • 2 sprigs basil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Wash the zucchini and slice lengthwise into strips using an asparagus peeler. Place in a large bowl. Finely dice the garlic, pluck the rosemary needles and thyme leaves. Finely chop the herbs except for the basil. Mix the herbs, salt, and oil well and pour over the zucchini strips. Mix everything well and let it marinate for about 30 minutes (you can also leave it longer). Heat a large, high-sided pan, add the zucchini, and sauté for about 5 minutes. Tear the basil into small pieces, except for a little for garnish, and sprinkle it over the zucchini noodles. Serve with baguette or briefly roasted meat.
