Leek and apple vegetables

Ingredients for 2 servings:

  • 40 g ham, cut into small pieces
  • 40 g onion(s), finely diced
  • 4 g garlic, very finely chopped
  • 3 m.-large leek(s) cut into medium-fine rings
  • 1 apple, peeled, cut into medium-thin slices, e.g. Elstar
  • 100 ml vegetable stock or chicken stock
  • e.g. chili salt
  • n. B. Pepper, black
  • some clarified butter
  • some lemon peel, grated

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Sauté the ham, onions, and garlic over medium heat. When the onions are translucent, add the leek. When the leek is soft, deglaze with half of the vegetable stock. When the liquid has evaporated, add the apple slices. Pour in the remaining vegetable stock, cover, and simmer over low heat for about 6-8 minutes. Season the vegetables with salt and pepper and toss. Grate some lemon zest (unsprayed/organic) over the vegetables. Toss the vegetables again and serve immediately.
