Zucchini pan with fried gnocchi

Ingredients for 3 servings:

  • 900 g gnocchi from the refrigerated section
  • 1 zucchini
  • 1 handful of cocktail tomatoes
  • 100 g bacon cubes
  • 1 garlic clove(s)
  • 150 ml vegetable stock
  • 100 g cream cheese with peppers
  • 1 cup of cream, approx. 200 ml
  • salt and pepper
  • Paprika powder
  • Thyme
  • oregano
  • some fat for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the zucchini and cut into small cubes or thin slices. Halve or quarter the tomatoes. Lightly fry both in a pan with a little fat. Crush the garlic and add it to the pan along with the bacon cubes, and fry lightly. Add the stock and cream cheese and simmer slightly. Season to taste with salt, pepper, paprika, thyme, and oregano. Finally, add the cream and simmer on low heat. In another pan, lightly fry the gnocchi on all sides in a little fat. Serve on plates with the sauce. Enjoy!
