Zucchini parcels

Ingredients for 4 servings:

  • 2 zucchinis
  • 6 tomatoes, dried
  • ½ bunch basil
  • 1 clove(s) garlic
  • 80 g sheep’s cheese
  • salt and pepper
  • Water
  • oil

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the zucchini and cut it lengthwise into thin slices. Blanch the zucchini slices in boiling salted water, remove them, and pat dry. Pour boiling water over the sun-dried tomatoes and let them steep. Remove them after about five minutes and chop them finely. Mash the feta cheese with a fork, mix in the chopped basil, tomatoes, and finely chopped garlic. Season with salt and pepper. Cross the zucchini strips, place 1-2 teaspoons of the feta cheese mixture on the cross, and fold the ends together to form small parcels. Secure with toothpicks and brush with oil. Place the parcels in an aluminum dinner tray with a lid (or wrap them in aluminum foil) and grill for 3-5 minutes.
