Zucchini patties

Ingredients for 4 servings:

  • 400 g zucchini
  • 4 tbsp oat flakes
  • 4 tbsp flour (whole grain)
  • 2 eggs
  • 1 tbsp herbs de Provence
  • 4 tbsp butter
  • 1 onion(s)

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Clean the zucchini and slice or grate it into fine strips. Add the oats, flour, eggs, and onion and mix well. Season with salt, pepper, garlic, and herbs and let it swell for about 20 minutes. Heat the butter. Add the zucchini mixture, tablespoon at a time, to the hot pan and fry on both sides. Serve with tomato sauce and/or a green salad.
