Zucchini Pizza
The perfect zucchini pizza recipe with a picture and simple step-by-step instructions.
- 300 g Zucchini
- 2 Pc. Eggs
- 130 g Mozzarella
- 50 g Parmesan
- 3 tbsp Flour
- 50 g Breadcrumbs
- 1 tsp Salt
- 0,5 tsp Black pepper from the mill
- 3 tsp Tomato paste
- 1 Pc. Tomato
- 1 tsp Oregano
- Basil
- Coarsely grate the zucchini on a grater, grate the mozzarella and Parmesan.
- Place the zucchini shreds in a bowl. Add the two eggs, 50 grams of the mozzarella, Parmesan, flour, breadcrumbs, salt and pepper. Mix everything together thoroughly.
- Place the zucchini mixture in a pizza pan lined with baking paper and smooth it out. Bake at 200 ° C for about 20 minutes.
- Spread three tablespoons of tomato paste on the baked pizza base and sprinkle with the remaining mozzarella. Cover with the sliced tomato, sprinkle with oregano and place in the oven at 200 ° C for another 20 minutes.
- Serve garnished with basil leaves.
