Zucchini Pizza

  • 300 g Zucchini
  • 2 Pc. Eggs
  • 130 g Mozzarella
  • 50 g Parmesan
  • 3 tbsp Flour
  • 50 g Breadcrumbs
  • 1 tsp Salt
  • 0,5 tsp Black pepper from the mill
  • 3 tsp Tomato paste
  • 1 Pc. Tomato
  • 1 tsp Oregano
  • Basil
  1. Coarsely grate the zucchini on a grater, grate the mozzarella and Parmesan.
  2. Place the zucchini shreds in a bowl. Add the two eggs, 50 grams of the mozzarella, Parmesan, flour, breadcrumbs, salt and pepper. Mix everything together thoroughly.
  3. Place the zucchini mixture in a pizza pan lined with baking paper and smooth it out. Bake at 200 ° C for about 20 minutes.
  4. Spread three tablespoons of tomato paste on the baked pizza base and sprinkle with the remaining mozzarella. Cover with the sliced ​​tomato, sprinkle with oregano and place in the oven at 200 ° C for another 20 minutes.
