Ingredients for 1 servings:
- 1.2 kg zucchini, large
- 350 g onion(s)
- 1 large bell pepper(s), red
- 350 g sugar
- 350 ml vinegar
- 4 tsp, leveled salt
- 2 tsp, leveled mustard seeds
- 2 tsp, leveled turmeric
- 4 tsp, leveled curry powder
- 2 tsp, leveled paprika powder
- 1 tsp, leveled chili powder
- 1 tsp, leveled cayenne pepper
- 1 tsp, leveled potato flour
Instructions
Working time approx. 15 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 15 minutes
Cut open the zucchini, remove the seeds and soft flesh. Dice the zucchini and onion, add salt and mustard seeds, and let it steep for at least 30 minutes. Then add the diced bell pepper and mix everything with the vinegar and sugar. Bring to a boil and simmer for a good 10 minutes, stirring occasionally. Add all the spices and simmer for about 5 minutes. Mix the potato flour with about 4 tablespoons of water and stir in. Bring the relish back to a boil briefly, then immediately pour into screw-top jars! Tastes wonderful, for example, with potato wedges in chili-rosemary oil!
