Zucchini, rice and minced meat pan

Ingredients for 4 servings:

  • 2 onions
  • 30 g margarine
  • 200 g rice
  • ¼ liter cream
  • ¼ liter vegetable broth
  • 1 bell pepper(s)
  • salt and pepper
  • 75 g cheese, grated
  • 500 g minced meat
  • 500 g zucchini
  • possibly saffron

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Finely dice the onions and sauté in margarine. Add the minced meat and fry until crumbly. Add the rice and sauté, stirring in the saffron if desired. Pour in the vegetable stock and heavy cream, cover, and cook for 30 minutes. Dice the bell peppers and add them and cook for 10 minutes. Thinly slice the zucchini and add them and cook for 5 minutes. Season with salt and pepper to taste. Sprinkle the cheese over the rice and serve.
