Zucchini rice casserole

Ingredients for 2 servings:

  • 100 g rice, cooked (weighed raw)
  • 250 g zucchini, coarsely grated
  • 1 onion(s), chopped
  • 1 egg(s)
  • 3 tbsp cheese, grated (anything from Parmesan to Gouda will do)
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Simply mix all ingredients together, pour into a greased casserole dish, and bake at 180°C for about 40 minutes. It tastes great on its own or as a side dish with pan-fried meat.
