Zucchini rolls with asparagus and wild garlic

Ingredients for 4 servings:

  • 4 m.-large zucchini
  • 250 g cream cheese
  • 250 g smoked ham
  • 200 g wild garlic
  • 1 bunch of asparagus, green
  • salt and pepper

Trim the bottom third of the green asparagus and peel the rest as needed. (If you want it softer, you can blanch the stalks in boiling water for about 5 minutes; we prefer it crisp and therefore use it raw.) Wash the zucchini and use a mandoline to slice it lengthwise into thin strips about 2-3 mm thick. If necessary, cut the ham and wild garlic into roughly equal-width strips. Cut the asparagus into equally wide pieces. Spread each zucchini strip with cream cheese and season with salt and pepper. Then cover with wild garlic and ham and place a piece of asparagus at the bottom end. Roll the zucchini strips around the asparagus, secure with toothpicks, and cook over medium heat on the grill (or in a pan, or at about 180 degrees Celsius in the oven) until lightly browned on the outside. Serve with baguette. A yogurt and garlic sauce or a feta dip goes well with it.
