Zucchini rolls with salmon

Ingredients for 4 servings:

  • 2 m.-large zucchini
  • 125 g smoked salmon, sliced
  • 3 tbsp olive oil
  • a few sprigs of dill

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the zucchini, remove the ends and stems, and cut the zucchini lengthwise into 5 mm thick slices. Lightly salt the slices and fry in oil until golden brown and slightly crispy on both sides. Drain the zucchini slices well on kitchen paper. Wash the dill, pat dry, and pick off the tips. Distribute the dill tips over the zucchini slices. Cut the salmon to the same width as the zucchini and place on top. Roll up the zucchini and secure with toothpicks or skewers. Serve garnished with dill.
