Zucchini Salmon Pasta
The perfect zucchini salmon pasta recipe with a picture and simple step-by-step instructions.
- 300 g Pasta
- 200 g Salmon cream see my KB
- Sea-Salt
- Pepper from the grinder
- 0,5 Zucchini
- 1 Onion
- 2 Garlic cloves
- 0,5 tsp Dried oregano
- Olive oil
- 200 ml Milk
- Parmesan
- Sugar
- Finely grate the zucchini and peel and finely chop the garlic and onion.
- Sweat in olive oil with a little sugar and add the courgette grated and lightly roast.
- Deglaze with milk and stir in the salmon cream, bring to the boil very briefly.
- At the same time, put the pasta in boiling salted water and cook until al dente.
- Season with oregano, salt, pepper and thicken with a little Parmesan and pasta water.
- Drain the pasta – do not scare it off – and add it to the sauce.
- In the meantime, grate a generous portion of Parmesan and prepare.
- Pour some more Parmesan over the pasta and serve directly in the pan.
