Zucchini Sauce / Dip … Mexican Style!

The perfect zucchini sauce / dip … mexican style! recipe with a picture and simple step-by-step instructions.

  • 1 Kg Zucchini, green and yellow
  • 500 g Pepper fresh
  • 1 Chilli fresh, mild
  • 300 g Onions
  • 125 ml Rapeseed oil
  • 1 liter Tomato puree
  • 1 Can Corn
  • 2 tsp Seasoned salt from my KB
  • 1 Pc. Long pepper
  • 1 tsp Tellicherry pepper
  • 1 tsp Grains of paradise
  • Alternatively COLORFUL PEPPER!
  1. Clean and wash the zucchini, bell pepper, onions and chilli and cut into about 1/2 cm small cubes. Heat the oil in a large saucepan and briefly sear the vegetables in it.
  2. Add tomato puree and corn and cook for about 10-20 minutes! Until the desired bite! 🙂
  3. Freshly crushed peppers and add to the vegetables with the seasoning salt!
  4. Put everything in clean canning jars and close immediately! Turn upside down for 5 minutes!
