Zucchini Sauce / Dip … Mexican Style!
The perfect zucchini sauce / dip … mexican style! recipe with a picture and simple step-by-step instructions.
- 1 Kg Zucchini, green and yellow
- 500 g Pepper fresh
- 1 Chilli fresh, mild
- 300 g Onions
- 125 ml Rapeseed oil
- 1 liter Tomato puree
- 1 Can Corn
- 2 tsp Seasoned salt from my KB
- 1 Pc. Long pepper
- 1 tsp Tellicherry pepper
- 1 tsp Grains of paradise
- Alternatively COLORFUL PEPPER!
- Clean and wash the zucchini, bell pepper, onions and chilli and cut into about 1/2 cm small cubes. Heat the oil in a large saucepan and briefly sear the vegetables in it.
- Add tomato puree and corn and cook for about 10-20 minutes! Until the desired bite! 🙂
- Freshly crushed peppers and add to the vegetables with the seasoning salt!
- Put everything in clean canning jars and close immediately! Turn upside down for 5 minutes!
