Zucchini spaghetti casserole

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 1 small onion(s)
  • 200 g cooked ham
  • 1 can of tomatoes, chopped
  • ½ tsp vegetable stock powder
  • 150 g cream cheese
  • 4 tbsp cheese, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

First, finely chop the onion and cooked ham. Add a little oil to the pan and sauté both. Meanwhile, use a spiralizer to cut the zucchini into spaghetti and place them in a baking dish. Then add the chopped tomatoes, vegetable stock, and cream cheese to the pan. Stir everything well, then pour over the zucchini spaghetti and mix everything together. If desired, you can also add more seasoning. Finally, sprinkle the cheese on top. Bake the zucchini spaghetti casserole for about 25 minutes at 180 degrees Celsius, and it’s done.
