Zucchini, sweet and sour

Spread the love

Ingredients for 1 servings:

  • 1 kg zucchini
  • 400 g onion(s)
  • 3 garlic cloves
  • 4 chili peppers, red
  • ½ liter vinegar (white wine vinegar)
  • 300 ml water
  • 5 tsp salt
  • 300 g sugar
  • ½ tsp pepper
  • 2 tsp celery salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Halve and deseed the zucchini, then slice into approximately 4 mm thick slices. Slice the onions into rings, and finely slice the garlic and deseeded chili peppers. Mix the vinegar with the water and spices, bring to a boil briefly, then add all the prepared vegetables (choose a large pot!) and let it simmer over low heat for about 30 minutes. Then, first remove the vegetables from the liquid with a slotted spoon and transfer them to clean twist-off jars. Bring the liquid back to a boil and immediately pour over the vegetables to the brim. Close the jars tightly. The storage time is approximately 3 months. Tastes excellent with grilled meat or as a side dish to a charcuterie board.
