Zucchini Tomato Rice
The perfect zucchini tomato rice recipe with a picture and simple step-by-step instructions.
- 40 gram Whole grain rice
- 100 ml Water
- 30 g Onion
- 0,5 pcs Garlic
- 1 tbsp Olive oil
- 100 g Zucchini
- 200 g Tomatoes
- Sea-Salt
- Pepper
- 2 tbsp Herbs
- Bring the rice to the boil and cook over a low heat for about 30 minutes. Finely chop the onion and garlic and sauté in olive oil. Dice the zucchini and sauté. Also cut the tomatoes into cubes and add to the zucchini. Let simmer for a few minutes and season with sea salt and pepper. Finally, mix in the cooked rice and season with the herbs.
