Zucchini – Tomato – Salad

Ingredients for 2 servings:

  • 2 m.-large zucchini
  • 12 cocktail tomatoes
  • 2 tbsp oil (garlic oil)
  • 2 tbsp vinegar (white wine vinegar or Melfor)
  • 1 small onion(s)
  • salt and pepper
  • 1 handful of basil

Wash the tomatoes and zucchini. Peel the zucchini if ​​it’s not organic. Coarsely grate the zucchini. Quarter or eighth the cherry tomatoes, depending on their size. The tomatoes shouldn’t be too chunky. Mix the vinegar and garlic oil, season with salt and pepper. Finely chop or grate the onion and add it to the dressing, stirring to combine. Wash the basil, shake it dry, and chop it. Add the vegetables to the dressing, sprinkle with basil, toss everything well, and serve immediately.
