Zucchini – Tomatoes – Vegetables

Ingredients for 3 servings:

  • 750 g zucchini
  • 750 g tomatoes
  • 1 onion(s), finely chopped
  • 2 tbsp olive oil
  • ½ tsp thyme, dried
  • 1 tbsp crème fraîche
  • salt and pepper
  • 1 bunch parsley, finely chopped
  • 1 garlic clove(s), finely chopped

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and trim the zucchini and cut into pencil-thin sticks. Peel and dice the tomatoes. Heat the oil. Sauté the onions, garlic, and thyme over low heat until the onions are translucent. Add the zucchini and tomatoes, bring to a boil, and simmer covered over medium heat for about 3 minutes, until the zucchini is just tender. Stir in the crème fraîche and season with salt and pepper. Stir in the parsley and serve.
