Zucchini with dried tomatoes and sunflower seeds

Ingredients for 1 servings:

  • 1 m.-large zucchini, quartered
  • 3 tomatoes, dried, cut into pieces
  • 1 handful of sunflower seeds
  • salt and pepper
  • 2 tbsp sweet cream
  • ½ tsp broth, granulated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Soak the dried tomato pieces in a little water. Fry the zucchini in a pan without fat, then deglaze with a little water. Add the soaked tomatoes and simmer for about 10 minutes. Sprinkle with sunflower seeds, season to taste, and bring to a boil with the cream. Serve with potatoes and taste just as good cold with some white bread. It’s quick to prepare and easy to take to the office.
