Creamy vegetable sauce

Ingredients for 2 servings:

  • 1 tbsp margarine
  • 2 tbsp flour
  • ¼ liter broth
  • ¼ liter of milk
  • 1 onion(s)
  • 1 garlic clove(s)
  • 200 g mushrooms
  • 2 carrots
  • Oil, for frying
  • salt and pepper
  • nutmeg

Working time approx. 40 minutes; Total time approx. 40 minutes

Delicious with noodles or rice

Heat the margarine, sprinkle with flour, and stir until a yellow paste forms. Gradually add the stock and milk, whisking vigorously to avoid lumps. Simmer the sauce, stirring occasionally, until creamy, then season. Lightly fry the finely diced onions in a little oil, add the very finely chopped mushrooms, and cook for a few minutes over medium heat with the lid closed. Finely grate the carrots and add them to the pan. Season the vegetables and add to the sauce, adjusting the seasoning if necessary. The sauce is delicious with a variety of side dishes and can be prepared with a variety of vegetables, such as zucchini, corn, kohlrabi, etc.
