Ingredients for 4 servings:
- 1 bell pepper(s), yellow
- 1 bell pepper(s), green
- 1 can of corn
- 1 can of beans
- ½ pack of mushrooms
- 3 chili peppers
- 500 g minced meat
- 1 pack of tomatoes, pureed
- ½ tube(s) tomato paste
- 1 pack of tortilla(s) (wheat)
- ½ pack of mozzarella, grated
- ½ pack of cheese (Gouda), grated
- 2 cups sour cream, or crème fraîche
- 2 onions
- Cayenne pepper
- Vegetable broth, instant
- cumin
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Drain the canned vegetables. Chop any vegetables that don’t come from a can. Brown the ground beef. Add the onions. Add the tomato paste and fry lightly. Add the remaining vegetables and the passata. Season with cayenne pepper, cumin, and vegetable broth (instead of salt). Simmer slightly. Preheat the oven to 200°C. Spread the flour tortillas with sour cream or crème fraîche. Then arrange the ground beef paste in the center and fold over the sides of the tortilla to form a roll. Place this roll in a rectangular baking dish. Make as many rolls as will fit in the baking dish. Spread each one with sour cream or crème fraîche and sprinkle with as much cheese as you like (mozzarella and Gouda). Bake until the cheese is golden brown in spots.
