Ingredients for 1 servings:
- 150 g flour
- 80 g rice syrup
- 100 g butter
- Organic lemon peel, grated
- 2 tbsp blue poppy seeds

Very tasty and suitable for a fructose-free diet
Preheat the oven to 160°C fan/convection oven and line a baking sheet with parchment paper. Combine softened butter and rice syrup in a mixing bowl with a mixer. Add the flour and mix. Fold in the lemon zest and poppy seeds and mix well. Using both hands, form small balls of dough and place them on the baking sheet. Flatten with a fork. This dough yields approximately 25 cookies. Bake for about 15 minutes, let cool, and enjoy.
