Spelt buttermilk bread

Ingredients for 1 servings:

  • ½ cube of yeast
  • ½ tsp salt
  • ½ tsp bread spice mix (to taste)
  • 600 g spelt
  • 300 ml water
  • 125 ml buttermilk
  • 2 tbsp olive oil

Instructions

Working time approx. 30 minutes; Rest time approx. 40 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 2 hours

Preheat oven to 220 degrees Celsius and place a heatproof bowl filled with water in the oven. Finely grind the spelt. Mix in the salt and bread spices. Dissolve the yeast in the lukewarm water. Combine the water, buttermilk, and olive oil with the grain and knead thoroughly for about 10 minutes by hand or with a food processor. Cover the dough and let it rise in a warm place until it has roughly doubled in size. Knead the dough briefly again and shape it into a loaf. Place it on a greased baking sheet, cover, and let it rise again. Place the bread in the preheated oven and bake for 10 minutes at 220 degrees Celsius. Bake for another 30-40 minutes at 170 degrees Celsius.
