Elderberry-apple jelly with cinnamon

Ingredients for 20 servings:

  • ½ liter juice (elderberry juice), unsweetened
  • 3 apples
  • ½ tsp cinnamon
  • gelling sugar

Working time approx. 30 minutes; Total time approx. 30 minutes

Christmas jelly

Mix the juice with the peeled apple pieces (cut into 3-4 mm pieces, really small) and prepare according to the package instructions with gelling sugar. Season with cinnamon to taste. I fill the jelly into 80ml preserving jars and cook the whole thing for another 10 minutes at 100 degrees. The cinnamon and apples give it a truly Christmassy taste. So: put it on a roll and enjoy. PS: You can either make the elderberry juice yourself by boiling the elderberries in a little water for about half an hour and then straining, or buy it from a health food store.
