Baked apple rings with cinnamon yogurt

Ingredients for 4 servings:

  • 80 g yogurt, 3.5%
  • 40 ml white wine
  • 120 g flour, smooth
  • 15 ml oil
  • 2 m.-sized eggs
  • 1 pinch of salt
  • 15 g sugar
  • 4 apples
  • 50 g powdered sugar
  • 1 lemon(s), the juice
  • 1 tbsp rum
  • Sunflower oil, for baking
  • Powdered sugar and cinnamon for sprinkling
  • 250 g yogurt, 3.5%
  • 1 tsp cinnamon powder
  • 1 packet of vanilla sugar
  • 1 tbsp powdered sugar

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

First, mix the flour, wine, oil, yogurt, egg yolks, and salt into a smooth batter. Then, beat the egg whites with the sugar until stiff peaks and fold into the batter. Peel the apples, slice them into rounds (approx. 1/2–1 cm thick), and cut the cores out of each slice (this is best done with a core cutter). Drizzle with lemon juice and rum and sprinkle with powdered sugar. Heat a sufficient amount of oil in a pan (it’s the right temperature when bubbles rise when a wooden spoon is dipped in). Dip the apple rings into the batter and fry in the oil at a slightly lower temperature until golden brown. Drain well on a paper towel and sprinkle with powdered sugar and cinnamon. For the cinnamon yogurt, mix all the ingredients (yogurt, cinnamon, vanilla sugar, powdered sugar) well and serve with the baked apple rings.
