Ingredients for 1 servings:

  • 1 kg pear(s) (service pears)
  • 1 packet of gelling sugar (1:2)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Serviceberry jam

Simply rinse and chop the pears, without coring or removing the small fruit cores. Cook according to the instructions on the sugar packet and fill into prepared jars while still hot. The serviceberry is admittedly a laborious task to pick, but it’s all the more worth it because it produces an extremely tasty jam with a faint taste of marzipan. This is because the small seeds contain bitter almonds (hydrocyanic acid) – albeit in small quantities. I’ve eaten a lot of these tasty little fruits and haven’t had any problems. The jam has now become my favorite. I don’t mind the small seeds or the fruit core in the jam – both become soft. I’ve also juiced the pears and made jelly from them – although it doesn’t turn out as delicious as the jam, which only gets its special flavor from the seeds. So, if you own edible serviceberry pears, I highly recommend this jam.
