Ingredients for 1 servings:

  • 900 g plum(s), washed and pitted
  • 500 g sugar
  • 100 ml port wine
  • ¼ tsp ginger powder
  • ¼ tsp clove powder
  • ½ tsp cinnamon
  • 1 point Gelfix (2:1)

Working time approx. 30 minutes; Rest period approx. 1 day; Total time approx. 1 day 30 minutes

Christmas spiced and refined with port wine

Mix the prepared plums with the sugar (except for 2 tablespoons), port wine, and spices. Let it steep for about 24 hours. Mix the gel-fix with 2 tablespoons of sugar and stir into the fruit mixture in a large saucepan. Bring to a boil, stirring constantly, and simmer for one minute. Remove from the heat, stirring a few more times if necessary and skimming off the foam. Immediately fill prepared jars to the brim and seal. This quantity makes approximately 4 200 ml jars.
