Ingredients for 4 servings:
- 1 ½ liters chicken broth or beef broth
- 600 g mixed vegetables of your choice
- 8 eggs
- 4 slices of bread (preferably brown bread), toasted if desired
- Parmesan, grated
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
how we like to eat them
Cook finely chopped vegetables in the soup until soft. Prepare fried eggs and place two on each slice of bread, seasoning. Ladle soup into bowls, place the slice of bread on top, and sprinkle with Parmesan cheese.
