Ingredients for 4 servings:
- 150 g zucchini
- 150 g eggplant(s)
- 150 g bell pepper(s), red
- 150 g mushrooms
- 150 g tomatoes
- Rosemary, fresh
- 2 garlic cloves
- 400 g pasta (macaroni)
- basil, fresh
- lemon juice
- 200 g Parmesan, freshly sliced
- Salt, freshly sliced
- pepper
- olive oil
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the zucchini, eggplant, bell peppers, and mushrooms into small cubes. Peel, deseed, and dice the tomatoes. Peel and crush the garlic. Heat the olive oil in a pan, then sauté the fresh rosemary and garlic with the eggplant. Then add the bell peppers, mushrooms, and zucchini. Sauté everything thoroughly. Finally, stir in the tomatoes and season with salt and pepper. Meanwhile, cook the macaroni in salted water until al dente and drain well. Place the cooked macaroni and vegetables in a bowl, stir in the basil, and season to taste with lemon juice, salt, and pepper. Finally, sprinkle with the freshly shaved Parmesan cheese and mix everything together thoroughly.
