Simple gingerbread

Ingredients for 1 servings:

  • 250 g cane sugar
  • 1 pinch of vanilla
  • 1 pinch of cinnamon
  • 300 g wholemeal spelt flour
  • 1 tbsp baking powder
  • 150 g hazelnuts, ground
  • 3 tbsp cocoa powder
  • 1 pt. gingerbread spice
  • 250 ml milk
  • 150 g butter
  • 3 tbsp honey
  • 4 eggs

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Combine sugar, vanilla, cinnamon, flour, baking powder, nuts, cocoa, and gingerbread spice. Heat the milk (do not boil) and add the butter; melt. Let it cool slightly, then add it to the flour mixture and mix immediately. Then add the eggs and honey; the batter should form a smooth dough. Spread the batter onto a greased baking sheet. Bake in a preheated oven at 200°C (top/bottom heat) for about 15 minutes. Let it cool and cut into small rectangles.
