Ingredients for 4 servings:
- 500 g potatoes
- 2 onions
- 125 g sour cream
- 125 g sweet cream
- salt and pepper
- chives

potato cheese
Boil the potatoes (they can be 1-2 days old), peel them, and press them through a ricer. Peel the onions, chop them very finely, and add them to the potatoes. Add the sour and sweet cream, mix everything together, and season with salt and pepper. Garnish with chives. The potato cheese makes a great spread on bread.
