Pork medallions with baked apple and honey sauce

Ingredients for 4 servings:

  • 1 tbsp clarified butter
  • 1 apple
  • 1 tbsp honey
  • 500 ml gravy
  • 2 tsp cornstarch
  • Salt
  • pepper
  • Cinnamon
  • 1 pork fillet(s), cut into 8 medallions
  • 8 slices of bacon
  • pepper
  • 2 tbsp clarified butter
  • 4 juniper berries
  • 1 tbsp Calvados

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Brown the apple cubes in melted clarified butter, add the honey, and caramelize lightly. Deglaze with the pan juices, bring to a boil, and reduce slightly. Thicken with cornstarch dissolved in a little water, and season with salt, pepper, and cinnamon. If desired, add 4-5 crushed juniper berries and 1 tablespoon of Calvados. Wrap each medallion tightly in a slice of bacon and secure with toothpicks. Heat the clarified butter, fry the medallions for 3 minutes on each side, then cover with aluminum foil and let rest for 5 minutes. Then add the meat juices to the sauce and bring back to a brief boil.
