Ingredients for 4 servings:

  • 5 tbsp mayonnaise
  • 100 g cream cheese
  • 1 tsp curry powder
  • Salt
  • 8 slices of toast
  • 8 slices of cooked ham
  • 1 pineapple, fresh
  • 20 g butter
  • 2 tbsp sugar
  • 8 slice(s) Gouda, medieval

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Preheat the oven to 200°C (top/bottom heat) or 180°C (fan oven). Mix the mayonnaise with the cream cheese and curry powder, season with salt and pepper. Peel the pineapple, quarter it lengthwise, and scoop out the woody center. Cut the flesh into 0.5 cm thick slices. Melt the butter in a pan. Add the pineapple to the pan, sprinkle with sugar, and let it caramelize slightly. Toast the slices of toast, let them cool, and spread them with the mayonnaise and cream cheese mixture. Place a slice of ham on each slice, followed by the pineapple slices. Cover with the cheese slices. Bake in the oven on the middle rack for about 10 minutes, until the cheese is melted and lightly browned. Serve dusted with curry powder, if desired.
