Toast with mushrooms and hunting sausage

Ingredients for 4 servings:

  • 70 g butter
  • 100 g mushrooms
  • 1 small onion(s)
  • Salt
  • pepper
  • 1 pinch of sweet paprika powder
  • 1 bunch of parsley
  • 1 bunch tarragon
  • Lemon juice, a few drops
  • 8 slices of toast
  • 16 slice(s) sausage, (hunting sausage), not too thinly sliced
  • 1 tbsp cress

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Put the room-temperature butter in a bowl. Clean and wash the mushrooms, then very finely chop half of them or mince them with a fine grinder. Peel the onion and chop it in the same way. Add it to the mushrooms and mix. Wash the herbs, pat them dry, finely chop them, and add them to the mushroom puree along with the lemon juice. Mix the mushroom mixture with the butter and season with salt, pepper, and paprika. Toast the bread, spread with the mushroom butter, and arrange the sausage slices on top. Slice the remaining mushrooms and arrange them in a wreath around the toast. Sprinkle cress in the center.
