lots of vegetables hidden under minced meat!

Wash the leek and slice into thin rings, finely dice the onion and garlic, peel and dice the celery, and peel and grate the carrots (whether coarsely or finely is a matter of taste). Sauté the leek, onion, and garlic in a little oil or butter until the leek is soft. Add the minced meat and fry until crumbly. Add the grated carrots and diced celery and sauté briefly. Add the passata and water (the vegetables and meat should be completely covered). Add about 2 tablespoons of vegetable stock, cover, and cook over medium heat until the celery is soft. Season to taste with pepper, vegetable stock, and chili flakes, and bring back to a boil briefly. A great spaghetti sauce!
