Baked zucchini and mushroom toast

Ingredients for 2 servings:

  • 1 small zucchini
  • 8 mushrooms, brown or white
  • 1 large onion(s), finely chopped
  • 1 thick garlic clove(s), finely chopped
  • 1 tbsp olive oil
  • salt and pepper
  • Cayenne pepper
  • Parsley, chopped
  • Chives, finely chopped
  • 2 slice(s) of cheese (Gouda or Raclette cheese) for topping, OR:
  • n. B. Cheese, grated
  • 2 slices of toast
  • 2 slice(s) of cooked ham, or alternatively salami, optional
  • possibly butter

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 21 minutes

Leftovers, small snack

Sauté finely chopped onion and garlic in olive oil until translucent, then add the sliced ​​zucchini and mushrooms. Season with salt and pepper, and sprinkle with a little cayenne pepper, then stir in. Toast the bread, brushing with butter if desired. Mix the vegetable mixture with parsley and chives. If desired, add chopped ham or salami (but it’s delicious without). Spread on the toast, top with sliced ​​or grated cheese, and bake in the oven (approx. 200°C) for about 6 minutes, until the cheese has melted.
