Apple and almond tartlets

Ingredients for 1 servings:

  • 2 rolls of dough
  • 3 tbsp apricot jam
  • 70 g butter
  • 200 g almonds, chopped
  • 130 g sugar
  • 2 packets of vanilla sugar
  • 2 tsp cinnamon
  • 3 eggs
  • 6 small apples, sour
  • 3 tbsp milk
  • 4 tbsp almonds, sliced
  • 1 tsp powdered sugar

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Unroll the puff pastry and cut each roll into 12 pieces. Grease 12 tartlet tins, place a piece of pastry in each, spread a little apricot jam on it, then place a second piece of puff pastry on top, offsetting it, and press it down lightly. Melt the butter and let it cool slightly. Add the chopped almonds, 100g sugar, vanilla sugar, 1 teaspoon cinnamon, and two eggs and mix with a hand mixer until creamy. Spread the mixture on the tartlets. If the mixture is very sticky, moisten the spoon to help spread it. Wash the apples, but do not peel them. Quarter and core them, cut them into thin wedges, and arrange them in a fan shape over the mixture. Preheat the oven to 200°C (top/bottom heat). Break up one egg, whisk the yolk with milk, and brush the tartlets with it. Mix the remaining sugar with 1 teaspoon of cinnamon and sprinkle over the apple slices. Sprinkle the almond flakes on top and bake for about 25 minutes until golden brown. Adjust the oven height according to the instructions on the puff pastry package. Dust the tartlets with powdered sugar, if desired, before serving.
