Ingredients for 4 servings:
- 250 g fennel
- 300 g carrot(s)
- 1 apple
- n. B. Fennel greens
- 150 g yogurt
- 1 tbsp oil, neutral
- 2 tbsp vinegar
- 1 tsp mustard, or herb mustard if desired
- 1 tsp honey or agave syrup
- ¼ tsp salt
- ½ tsp salad herbs or parsley
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Trim the fennel stems and finely chop the fennel. Coarsely grate the carrots and dice the apple. Finely chop the fennel greens. For the salad dressing, mix the yogurt with the listed ingredients. Mix the fennel and carrots with the salad dressing. The apples can either be folded in or garnished on top. Finally, sprinkle with fennel greens.
