Nut cake – Grandma's recipe

Ingredients for 1 servings:

  • 200 g sugar
  • 10 egg yolks
  • 250 g nuts, ground
  • 3 tbsp breadcrumbs
  • some bitter almond flavor
  • 10 egg whites
  • 150 g sugar
  • 2 cups of cream
  • n. B. sugar

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Egg yolk utilization/ no butter/ no flour/ very moist, delicious base

Grease the bottom of a springform pan. Preheat the oven to 170°C. Beat the sugar and egg yolks until frothy, then add the nuts, breadcrumbs, and bitter almond oil. Beat the egg whites and sugar until stiff, fold into the egg yolk mixture, and pour into the pan. (Caution: The batter is very rich; don’t overfill the pan, as it will overflow.) Bake in the oven for about 50 minutes (or a little longer; just do the skewer test). Once cooled, cut the base in half lengthwise. Whip the cream and sugar until stiff, then fill and decorate the cake. Makes 12 slices.
