Ingredients for 1 servings:

  • 300 ml milk, warm
  • 2 eggs
  • 45 g butter, melted
  • 1 ½ tbsp sugar
  • 21 g fresh yeast
  • ¾ tsp salt
  • 500 g flour
  • 2 tbsp water
  • e.g. sesame

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour 45 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 2 hours 25 minutes

Burger buns with sesame; serves 8-9

Makes 8-9 buns. Mix warm milk, sugar, yeast, and melted butter and set aside until foamy. In another bowl, combine the flour and salt. Add the yeast mixture and one egg and mix. Knead everything into a dough using a food processor for 5-7 minutes. The dough should not be sticky, but not too firm either. Add a little milk or flour if necessary. Let the dough rise in a warm place for one hour. When the dough has roughly doubled in size, knead out any air. Divide the dough into 8-9 equal portions of 100-110g. Form the buns and place them on a baking sheet. Cover with plastic wrap and let rise in a warm place for about 45 minutes. Lift the plastic wrap every 10 minutes to prevent the dough from sticking. Whisk the second egg with the water, brush the buns with it, and sprinkle with sesame seeds. Bake in a preheated oven at 190°C for about 20 minutes until golden brown. Cover with a kitchen towel and let cool for about 15 minutes. The towel is important because it’s the only way to keep the buns nice and soft.
