Round stuffed zucchini

Ingredients for 3 servings:

  • 3 zucchini, round
  • 3 spring onions
  • 10 cherry tomatoes
  • 1 bell pepper(s), yellow
  • 50 g lean ham, diced
  • 120 g herb cream cheese
  • 3 tbsp olive oil for frying
  • 3 tbsp cheese, grated

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour

Cut a lid off the zucchini and scoop out the contents with a spoon. Cut the spring onions, bell peppers, and tomatoes into very small pieces or slices. First, heat the oil. Then add the onions and bell peppers and fry. Then add the diced ham and continue frying. Then add the tomatoes and let them sizzle a little more. Then stir in the cream cheese. Fill the zucchini with the mixture and sprinkle the grated cheese on top. Bake in the oven at 200°C for about 30 minutes.
