Ingredients for 2 servings:
- 300g penne
- 200 g beef, e.g. roast beef or similar for quick frying
- 100g bacon
- 1 bunch of spring onions
- 200 g mushrooms
- e.g. broccoli florets
- ½ cup cream cheese with horseradish, approx. 100 g
- 1 cup of cream, approx. 200 g
- salt and pepper
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes
Dice the meat and bacon. Quarter the mushrooms and cut the broccoli into florets. Slice the white part of the spring onions into thin rings and the green part into slightly larger rings. Cook the pasta al dente according to the package instructions. Brown the meat and bacon in a pan without oil for about 5-6 minutes (the bacon will render enough fat). Set the cooked meat aside. Add 2 tablespoons of olive oil to the pan and fry the broccoli, mushrooms, and white spring onion rings over medium heat for about 10 minutes. Deglaze with the cream and reduce slightly. Add the cream cheese. Add the meat to the pan and season with salt and pepper. Finally, add the pasta to the pan and garnish with the green parts of the spring onions.
